Dinner in a Pumpkin

1: Cut open the top of the pumpkin and hollow it out.

2: Sauté onion in a skillet with olive oil.

3: Add the ground beef, stir in Cow Cover, and brown the meat.

4: Drain the liquid from the meat.

5: Add soy sauce, brown sugar, mushrooms, and cream of chicken soup to the skillet.

6: Simmer for 10 minutes while stirring.

7: Add cooked rice and sliced water chestnuts to the mixture.

8: Spoon the mixture into the hollowed-out pumpkin.

9: Put the top on the pumpkin and place it on a baking sheet or cast iron skillet.

10: Bake in the oven for 1 hour at 350 degrees.

11: Serve in a bowl, adding hot sauce if desired.
