1. Set out pieces of cod to air dry and come to room temperature.
2. Make the dry batter by mixing 1/4 cup flour, 1/2 cup corn starch, 1 tsp baking powder, 1/4 tsp turmeric, a few sprinkles of black pepper, a little salt, a little garlic powder, and a little celery salt in a bowl.
3. In another bowl, make the wet batter using the same dry batter ingredients, but slowly stir in 1/2 cup of beer.
4. Let the wet batter sit for 20-30 minutes to thicken before using.
5. Set a deep fryer to 350°F (using peanut oil).
6. Once the wet batter has thickened, pat the fish dry.
7. Cover each piece of fish first in the dry flour mixture, then in the wet batter, and carefully place into the hot oil.
8. Fry for approximately 5 minutes per piece or until golden brown and cooked through.
9. Transfer the fried fish to a paper towel to soak off excess oil and let cool for 1-2 minutes.
10. Serve with fries and tartar sauce and enjoy!
