Pork Carnitas

Slice a boneless pork butt into chunks.

If you like to use a binder, cover with avocado oil, then rub it with a Mexican style bbq rub.

Smoke it indirect at 300F until reaching 170F internal or until the bark looks good.

Transfer the meat chunks to a foil tray for braising and add in the juice of 3 large oranges, 2 Mexican coca-colas, and 4 bay leaves.

Cover it up with foil and place it back on the smoker until reaching 207F.

Rest while still covered for 30 minutes, then break the meat apart and enjoy.
