Instructions

1: Combine the Pepper Jack Cheese, Cheddar Cheese, Cream Cheese, Rotel Tomatoes, Green Chiles, diced Red Onion, and one packet of Chili Seasoning in a cast iron skillet or foil tray.

2: Place in the smoker at 275°F for 60 minutes.

3: Mix everything up after 60 minutes and leave it in the smoker.

4: Season Ribeye Steak with another packet of Chili Seasoning.

5: Cook the steak to your preference using the reverse sear method.

6: Once cooked, cut the steak against the grain into small pieces and mix into the queso.
